Around the world, traditional gatherings are held to celebrate the time of the harvest, as the results of many months of effort and care finally come to fruition. We should indeed celebrate and honour the hard work of those who dedicate themselves to growing our food. We owe them our gratitude and support.
Harvest time is a great time to take advantage of buying from our local farms and markets whenever possible. You will find that the flavours are usually far superior to those of chain stores, and so much fresher! Fresh ingredients make such a difference in our meals!
My family is lucky to live near a number of farms in the heart of B.C.’s fertile Fraser Valley. Our favourite is Willow View Farms; we have been enjoying fresh apples, berries, and pumpkins from them for decades! In the last few years, we have also discovered the joy of butternut squash; it is such a versatile vegetable, as it can be used for making so many both sweet and savoury recipes. Willow View’s squash are wonderful and, kept in a cool place, they will last for months, so we can enjoy them in the colder months ahead. This Roasted Butternut and Carrot Soup is simple and warming on a cold day!
There is something butternutty for every part of your meal! As an appetizer, the Butternut and Asparagus Galette is lovely to present. Drizzle on a little extra garlic cashew cream cheeze!
