Apple Pie-rogies
These little pockets of apple/cinnamon tastiness are easy to make and freeze so well! You can use some of your homemade applesauce with added chunks of fresh apples or just make a quick fresh apple filling for your easy homemade pirogi dough.

  1. For the dough, in your mixing bowl, combine the flour and salt. Add the water and melted butter together and mix well.
  2. Using your kneading attachment, let the dough mix for about 5 minutes or until smooth and elastic. When it has finished, oil your bowl, cover with a cloth, and let your dough rest for an hour. This makes it easier to work with.
  3. While the dough is resting, prepare your apple filling, below. Let cool.
  4. Once your dough has rested, it is time to turn it into perogies! Roll out your dough between two layers of parchment paper or on a silicone mat. It is very elastic, so be patient! It should be as thin as possible and you should be able to make about 24 three-inch circles.
  5. Put about a tablespoon of filling in the middle of each circle and fold the dough over, pinching the edges together. If they are not staying together, moisten the edges with a little water. It is important that each one is sealed completely.
  6. To freeze some for later, just lay out on a sheet of parchment paper and freeze them separately. Once frozen, you can throw them in a bag to seal tightly. They do not need to be defrosted before boiling.
  7. If you are cooking them right away, bring a large pot of salted water to a boil. Gently put your perogies into the water and allow to cook until they float to the surface. Now you can lift them out with a slotted spoon and put them into a hot frying pan with a little oil. Turning often, fry until they are brown and crispy. These are best eaten while fresh and hot!
  8. Sprinkle with a little cinnamon sugar for a little extra crunch, or dust lightly with a little icing sugar. These are luscious served with some Caramelized Cinnamon Sauce! Enjoy!
Apple Pie Filling!
  1. Peel and dice an apple. In a small saucepan, put 1/2 cup of brown sugar, 1 teaspoon cinnamon and 1/4 teaspoon allspice, 1/4 teaspoon salt, and the diced apple. Cook, stirring, until apples have softened. Add applesauce and stir to combine flavours! So simple and yummy! You could also increase the chopped apple and leave out the applesauce, if you don’t have it.

These are good with a sprinkle of cinnamon sugar or just a dusting of icing sugar. A drizzle or dipping bowl of Caramelized Cinnamon Sauce makes these irresistible!
