Sometimes you just need waffles! This dairy and egg-free recipe makes them wonderfully crisp and delicious!

Ingredients
- 2 1/2 cups unbleached flour
- 1/2 cup almond flour or try corn meal for added crunch!!
- 1/4 cup sugar
- 3 Tablespoons baking powder
- 1/4 teaspoon salt
- 1/4 cup fresh lemon juice
- 1 teaspoon finely grated lemon rind
- 2 cups almond milk You can use any plant milk
- 1/4 cup vegetable oil I use sunflower or canola. Avoid the olive oil as it has too much flavour
- 2 teaspoons vanilla I always use real vanilla extract....it makes a difference!
- 2 flax "eggs" A flax "egg" is just 1 Tablespoon of ground flax seed in 3 Tablespoons of warm water. Mix together and let sit for a few minutes until it combines.

- Warm up your waffle pan. Make sure you give it a quick spray with vegetable oil even if it says non-stick.
- Prepare your flax "eggs" in a separate cup.
- Sift together your flour(s), sugar, baking powder and salt.
- Mix together your wet ingredients, including lemon rind and "eggs" in a large mixing bowl.
- Add sifted dry ingredients to bowl and mix until combined. It should be quite thick.
- Let the batter sit for about 10 minutes to allow rising agents to activate.
- Ladle about a cup of batter on to your sprayed pan. Adjust quantity according to the size of your pan.
- Close and bake as directed until golden brown. Remove from pan carefully and eat immediately!! If you want to cool them, do so on a rack, so they don't get soggy. They also toast up well for later!
- Serve with a small bowl of warm maple syrup. No cutlery needed! Enjoy!
- Or...experiment with toppings! Make a simple berry sauce with fresh berries (eg. blueberries or raspberries) cooked gently. Mix a little cornstarch with a little sugar and add to your warm berries. Cook a few minutes to thicken. You could also serve this in a dipping bowl beside your maple syrup. The combination is awesome!! (* if using blackberries, be sure to sieve out the seeds.)

Also great served with apple butter, or spiced apple sauce.
Try topping one with some vegan ice cream, vegan whipped cream, and sliced fresh strawberries! I think these are even better than shortcake!
Delicious! Left out the almonds because of an allergy and it worked great with a little more AP flour.
