- 4 slices grainy bread or 2 grainy buns.
- 1 medium avocado
- 1 large tomato
- 1/2 medium English cucumber No need to peel
- 1/2 sweet yellow pepper
- 1/2 sweet orange pepper
- 1/4 small purple onion sliced very thinly
- 1/2 cup tzatziki plus more, if desired
- salt and pepper to taste
- 1 cup mixed greens spinach works well

- Slice all your veggies thinly in preparation. Salt your avocado to keep it from going brown.
- Toast your bread a little to add crunch and better support the tzatziki.
- Spread your tzatziki on your toasted bread. Lay your avocado slices into the sauce. Season with salt and pepper to taste.
- Layer your tomatoes, cucumbers, peppers, and thinly sliced red onion on top.
- Add a handful of greens and cover with top bread or bun. Consume with joy!!
