Ingredients
- 2 1/12 cups unbleached flour This keeps it light.
- 1/2 cup almond flour You can substitute other flours to add nutritional content and flavour. Corn meal is also great, as it adds a nice texture!
- 1/4 cup sugar
- 3 Tablespoons baking powder
- 1/2 teaspoon salt
- 1/4 cup fresh lemon juice
- 2 cups oat milk, or other unsweetened, unflavoured plant milk
- 1/4 cup vegetable oil
- 2 flax "eggs"
- 1/4 cup finely chopped chives
- 1-2 cloves fresh garlic, minced
- 1/4 cup nutritional yeast This adds a cheesy flavour and B12.
- 1 teaspoon finely chopped herbs. I would use thyme, savory, rosemary Make sure the herbs are finely chopped. If using dried herbs, use half the quantity.
- 1/2 a small jalapeno, finely minced. This is an option for those who like a spicy bite! Feel free to omit.

Instructions
- Warm waffle pan. Make sure you spray the pan with a little vegetable oil, even if it says it's non-stick!
- Prepare your flax "eggs" by putting two tablespoons of roasted ground flax seed in a small cup with 6 tablespoons of warm water. Let sit until combined.
- Sift together your dry ingredients: flours, sugar, baking powder, and salt. Stir in the herbs, spices, and nutritional yeast.
- Stir together lemon juice, milk, oil, lemon juice, and flax "eggs" in a large mixing bowl.
- Add dry ingredients to wet ingredients and mix til combined.
- Pour approximately one cup of batter on the pan and close. Cook as directed by your machine until crisp and golden.
- Serve warm with a homemade guacamole, a veggie gravy, or a vegan nacho "cheese" sauce. Enjoy!
