Warm waffle pan. Make sure you spray the pan with a little vegetable oil, even if it says it’s non-stick!
Prepare your flax “eggs” by putting two tablespoons of roasted ground flax seed in a small cup with 6 tablespoons of warm water. Let sit until combined.
Sift together your dry ingredients: flours, sugar, baking powder, and salt. Stir in the herbs, spices, and nutritional yeast.
Stir together lemon juice, milk, oil, lemon juice, and flax “eggs” in a large mixing bowl.
Add dry ingredients to wet ingredients and mix til combined.
Pour approximately one cup of batter on the pan and close. Cook as directed by your machine until crisp and golden.
Serve warm with a homemade guacamole, a veggie gravy, or a vegan nacho “cheese” sauce. Enjoy!
