Smoky Jalapeno Sauce
This easy hot sauce, rich with the flavour of smoked jalapenos, is a valuable and versatile addition to so many meals. Oven-charred jalapenos with 1/4 teaspoon of smoked paprika works well as an alternative.

  1. In a frying pan, heat a little oil in a frying pan. Add the chopped onion and cook for a few minutes on medium heat. Add the minced garlic and stir until lightly cooked. You do not want the garlic to brown, as this makes it bitter.
  2. Combine all the ingredients, including the onion and garlic mixture in a food processor and blend to desired texture.
  3. Taste a very small amount to determine if any more salt is needed. The level of heat will vary depending on the heat of the original jalapenos. As it can be very hot, you can freeze it in small portions for adding to chiles, enchiladas or a Smoky Jalapeno Mayo.
  4. Bottle in small jars, label, and freeze until needed. Enjoy!
