Our First Year’s Yopping!

It has been an amazing, productive, and soul-satisfying year! Two hundred and some recipes later and so many lessons learned along the way, A Vital Yopp has blossomed into a spectacular collection of delicious vegan and veganized recipes! I am so proud and grateful for all the support and guidance, especially from my patient and creative husband, whose technical expertise, gaffing skills, generosity, and willingness to try new things has made this possible.

I have learned to be more comfortable and flexible with the world of vegan cooking, to try new flavours, new food items and different ways of baking and eating. It has made me a much more mindful cook, and I continue to explore on. The possibilities now seem endless! I have found a joy in cooking and eating again that I had lost. I have found a way of living that aligns with my values and it feels so right.

This year has seen some major shifts in awareness. The world seems to be shifting perspective and conversations that were so hard to have are now more commonplace. Ingredients to make your own vegan meals are readily available in every store! Online shopping makes it easy to get some of those specialty items you might want to experiment with. Restaurants offer so many more vegan options now than they did even a year a ago. The number of others who are sharing great recipes is impressive and encouraging!

This project continues to provide me with a way to be encouraged and encouraging; a way to try and make a difference, to be part of a positive change. I wanted to share with others, especially my family, how easy and delicious it can be to be kinder, to care enough about our fellow creatures to try eating differently. I have connected with and learned from so many people who are on the same path! I now feel much less alone on this journey! I love being able to offer up my experiences and recipes, hoping the ideas continue to get shared with love and purpose. Your help with the sharing process is always appreciated. Change happens slowly but it happens when, together, we speak up for what is right. The Yopping continues!
