It’s easy and soul-satisfying to create delicious combinations of nutritious tastiness. Just keep in mind the basics, and enjoy the variety! Have a stir-fry, a bowl, a wrap, or a plateful of colourful veggies, raw and/or cooked, add nuts/seeds, maybe some tofu, fruit, whole grains, (quinoa, brown rice, millet noodles, etc.) sprouts, and lots of flavourful and nutritious sauces to add zip! Find easy recipes on the internet, or make up your own favourite combinations! The options are endless and you can keep it fast and simple! Pastas are so quick, easy and versatile! Use the dry pasta (usually vegan, but check for eggs) that has the most goodness, such as the chickpea and lentil pasta, and it’s perfect if you are needing to be gluten-free.
The Roasted Garlic Cashew Cream was great on everything! Roasting veggies makes them so delicious!
Erin made some easy, homemade tortillas and I used Crispy Cauliflower Bites, some smoked corn with chopped cucumbers and orange sweet pepper, some quick pickled onion and Erin’s Extra Green Guacamole.
Every meal is an opportunity to make the world a better place, to choose food that nourishes and provides us with the energy to continue making a positive difference! We can live deliciously without participating in the violence and cruelty of animal “agriculture”. Though some people will argue that it is too difficult to change the way they eat, it is clear that the consequences of continuing to consume animal products are seriously negative, for the planet, for people’s health, and, most importantly, for the billions of innocent beings that are treated as commodities. Change is possible and so vital! Let’s be that change!
