These flavourful, gluten-free, and nutritious Pumpkin Milken Cookies have the added benefit of supporting milk production for nursing moms!
These tasty, gluten-free Pumpkin Milken Cookies contain lots of what is needed to support milk production, but everyone will enjoy the flavours and crunch of spiced pumpkin and roasted pecans, with the added nutritional support of flaxseed, chia seed, almonds and oats!

Ingredients
- 1/2 cup vegan butter
- 3/4 cup brown sugar
- 2 teaspoons vanilla
- 1 cup pumpkin puree
- 2 Tablespoons ground flaxseed softened in 6 Tablespoons water for a few minutes.
- 1 Tablespoon chia seed softened in 3 Tablespoons water for a few minutes.
- 3/4 cup almond flour
- 3/4 cup oat flour (gluten-free) Just put your oatmeal though the blender until powdered!
- 3/4 teaspoon salt
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon allspice
- 1/2 teaspoon grated ginger or 1/4 teas of powdered ginger
- 1/2 teaspoon cinnamon
- 1/4 teaspoon cloves
- 1 cup chopped roasted pecans
- 3/4 cup oatmeal gluten-free version, if desired

Instructions
- Heat oven to 350 degrees F.
- Prepare pans with parchment paper or sil pads.
- Soften the flaxseed and the chia seed with water in small bowls for a few minutes until gelled.
- In a large mixing bowl, beat butter until light.
- Add brown sugar and vanilla and beat.
- Add pumpkin puree and beat again until well-combined.
- Beat in the softened flaxseed and chia seed.
- In another bowl, sift together all the dry ingredients, except the pecans and the oatmeal.
- Add the dry ingredients to your large mixing bowl. Mix until combined and then stir in the chopped pecans and the oatmeal.
- Drop cookie dough in rounded spoonfuls on to cookie sheets. leaving space between. They won't spread much, though.
- Bake for about 15 minutes or until brown on the bottom. Remove from pan and let cool on a rack.
- Enjoy the goodness! These cookies can be frozen and consumed when needed. Just warm in the oven for a few minutes to make them like fresh-baked. Moms deserve the best!
