An easy and beautiful way to add color and sparkle to those hot summer days, these Garden Iced Teas are delicious, refreshing, and fun to create using common garden ingredients, like clover and wild mint! Edible-flower ice cubes are easy and lovely!

- 5-6 clover heads - well washed
- 3-4 mint leaves
- 1 cup boiling water
- 1 can sparkling water
- lemon juice optional but fun!
- organic sugar optional but fun!
- edible flower ice cubes too fun to be optional!!
- agave optional but tasty

- Gather your clovers from an area that has been free of animal traffic and that you know for sure has not been sprayed with any pesticides. Some might consider this a weed. Wash them well and remove the stems.
- Mint often grows wild in gardens. Again, be sure it is safe to consume. Wash well.
- Put the clover and mint in a 2 cup mason jar.
- Pour a cup of boiling water over the clover and mint and cover.
- Allow to cool and then put it in the fridge overnight or for a couple of days.
- When ready to serve, rub a little lemon juice on the rim of a fancy glass and then roll the rim in an organic sugar.
- Carefully sieve the clover and mint iced tea liquid and then carefully pour it into the glass without disturbing the sugared edge.
- Add 3-4 ice cubes. Easy edible flower ice cubes are made by carefully choosing and washing edible flowers, arranging them in an ice cube mold (round is awesome!) and filling with water. Freeze overnight and unmold just before serving.
- Carefully pour your sparkling water over the ice cubes to fill the glass.
