- 1 1/2 cups all purpose flour
- 1/4 teaspoon salt
- 1/2 cup vegan butter I used Earth Balance.
- 1/4 cup ice water
Filling
- 4 cups chopped fruit If the peel is bitter, you should peel it first.
- 2 Tablespoons corn starch Increase if fruit is very juicy.
- 2 Tablespoons organic white sugar You could leave this out if your fruit is really sweet.
- 1 Tablespoon plant mik

Instructions
- Heat oven to 400 degrees F.
- In a large bowl, stir flour and salt together.
- Cut cold butter into the flour mixture, just until combined.
- Sprinkle cold water over and gently stir until dough forms. Be careful not to overwork the pastry or it will be tough.
- On parchment paper, roll out the dough into a large circle, approximately 12 inches in diameter.
- Sprinkle with some cornmeal or semolina to help keep the crust from getting too soggy during baking.
- Slide galette and parchment paper onto a cookie sheet.
- Let pastry chill for a few minutes while you prepare the fruit.
- Just mix the sugar and cornstarch together and sprinkle over the fruit. Stir to coat all the fruit.
- Pile the fruit mixture in the middle of the pastry and gently fold the edges in to make the galette. Perfection is not required!
- Brush the pastry with a little plant milk and sprinkle with a little coarse sugar.
- Bake for about 30 minutes or until bubbly and nicely browned.
- Let cool a little. Best served warm with a little coconut whipped cream or vegan ice cream! Enjoy!
