Ingredients
- 2 cups ripe blackberries Forage for some wild ones away from road dust.
- 1/2 cup balsamic vinegar
- 2-3 teaspoons agave depending on the sweetness of your berries
- 4 cloves fresh garlic minced
- salt and pepper to taste
- 2 cups cooked and cooled quinoa
- 1 cup chopped coloured sweet peppers
- 1/4 cup chopped chives

Instructions
- Wash and squish your fresh blackberries through a sieve to remove seeds.
- In a jar, combine the vinegar, agave, garlic, and salt and pepper to taste.
- Add your squished blackberries and shake to combine! This makes a great salad dressing for regular salads, too!
- In a large bowl, toss together your cooled quinoa, the chopped peppers, and the chopped chives.
- Drizzle over the blackberry squish dressing and toss gently to combine. This is great served on a bed of lettuce and decorated with some fresh tomatoes!
- This can be eaten right away or made ahead and enjoyed the next day. It keeps well in the fridge for a few days!
