Fresh raspberries are a special treat! This dressing is so incredibly simple and quick, you’ll never want store-bought again! This has a wonderful sweet and tangy bite and pairs so well with summer greens! It can be made ahead and keeps well.

Ingredients
- 1/4 cup olive oil
- 1/4 cup vinegar I have used both white wine vinegar and balsamic. Both are great!
- 1 small package fresh raspberries about 1/2 - 3/4 cup
- 2-3 Tablespoons agave -depending on the sweetness of the fruit.
- dash salt and pepper to taste

Instructions
- Add all ingredients to a food processor and whirl until smooth. Adjust seasoning to taste.
- For a smoother dressing, put the processed mixture through a sieve.
- Let sit in fridge for a few minutes for flavours to meld. Try it on a tossed green salad with some slices of avocado, some toasted sunflower seeds, and any additional goodies you like! Try a variety of nuts, seeds, maybe some craisins, and you have a delicious and nutritious summer meal! Enjoy!
