Ingredients
- 1 cup purple cabbage sliced thinly
- 2 sweet carrots
- 2 Tablespoons chopped green onion or chives
Coleslaw Dressing
- 1/4 cup apple cider vinegar
- 1/4 cup light-flavoured olive oil
- 1 Tablespoon maple syrup
- 1/2 teaspoon spicy mustard or dijon
- 1/4 teaspoon cumin
- salt and pepper to taste
- black sesame seeds to sprinkle on top for nutrition and eye-appeal.

Instructions
- Slice the cabbage thinly. Grate carrots on a medium sized grater. Chop the green onions or chives. Toss your three vegetables together in a large bowl.
- In a small jar, combine all the ingredients. Shake well to combine. Adjust salt and pepper to taste.
- Drizzle the dressing over the vegetables and toss to combine. This is best served fresh, as the colour of the cabbage will dye the carrots if left overnight. It is best to dress this salad on the day you plan to serve it.
- Sprinkle with black sesame seeds for a great look and added nutrition.
