Cookies
  1. Heat oven to 350 degrees F. Line cookie trays with parchment paper.
  2. In a mixing bowl, beat together the butter and sugar until fluffy. Add the flax "egg", and beat again. Mix in the lemon and lime rind and juice. Stir the cornstarch into the plant milk until dissolved. Add it to the mixing bowl and stir to combine.
  3. In a separate bowl, sift the flour, baking powder, baking soda and salt. Stir in the almond flour.
  4. Add dry ingredients to the mixing bowl and beat to combine. You should have a soft and delicious cookie dough.
  5. To bake, you can put this dough through a cookie press or roll in small balls. If using these to make Citrus snowballs, just cook as a ball. If you want the flatter cookies, just flatten slightly with the bottom of a glass. Even better, do some of both!
  6. Place your cookies on the pan, allowing room to spread. Bake for about 6-8 minutes or until the cookies are a little golden brown around the edges. If you prefer a crispier cookie, allow to bake for another minute or two.
  7. When done, remove cookies from the pan on to a rack to cool before icing them.
Cream Cheeze Icing
  1. In a mixing bowl, cream the butter and cream cheeze together. Add the sifted icing sugar along with the lemon and lime juices and the vanilla. Beat until smooth, adding a little more lemon juice to make a glaze-type icing that is not too thick or too thin.
  2. When cookies are cool, while they are on the rack, use this glaze to cover the cookies. The Citrus Snowballs should be covered with the glaze and then rolled in coconut. If you want to add decorations, try a little grated lime peel and a sliver of dried cranberry; be sure you add these while the icing is still soft.
  3. Leave the iced cookies to dry before eating. These can be made ahead and kept airtight. Enjoy!
