Ingredients
2flax "eggs"Two Tablespoons of ground flaxseed mixed with 6 Tablespoons of warm water. Let sit for a few moments to combine.
Heat oven to 350 degrees F. Prepare cookie trays with parchment paper.
Make your two flax "eggs" by combining 2 Tablespoons of ground flax seed with 6 Tablespoons of warm water and let sit for a few moments.
In a large mixing bowl, beat together the sugar, butter, and peanut butter until well-combined and a little fluffy.
In a separate bowl, sift together the flours, the cream of tartar, the baking soda and salt.
Mix together the applesauce, the flax "eggs", and the vanilla. Add this to the sugar and butter mixture and beat well.
Now add the sifted dry ingredients into the large mixing bowl and mix until combined. Dough will be quite stiff.
Combine Cookie Coating ingredients in a shallow bowl. Roll a rounded teaspoon of cookie dough into a ball and then roll the cookie ball through the sugar and cinnamon mixture to ensure all sides are coated.
Place sugared cookie balls onto the parchment paper, leaving about two inches between cookies.
Bake at 350 degrees F. for about 8 - 9 minutes. If you prefer a crispier cookie, let cook for a minute or two longer.
Remove and let cool on a cooling rack. Enjoy!
Recipe Notes
These cookies keep well in an airtight container. They are best the first day, as they have an extra crispness then, but they are great keepers. Add them to your holiday cookie tray!
