Instructions
  1. Rinse and press the tofu. Crumble it into a bowl.
  2. Add the garlic, peppers, onions, nutritional yeast, and spices. Stir in the vegan parmesan and season with salt and pepper to taste. Set aside.
  3. On a silicon sheet or parchment paper, lay out six wrappers at a time. Brush the outer edge of each circle with a little water. Place a rounded teaspoon of filling in the middle of each and fold each one over, making sure to seal well. You don't want them breaking open while cooking. Make sure you keep them separate.
  4. Continue the process of filling and sealing until all of the filling is used. (There will be a few wrappers left over. Try filling them with some applesauce, frying them and then tossing them with a little cinnamon and sugar.)
  5. You can put these in the fridge or freezer at this point.(They can be cooked from frozen; no need to thaw.) If you are going to eat them now, heat an inch of oil in a heavy pan. It should be a medium temperature and you will have to experiment with the first dipper. The temperature is correct when it can become golden brown in the time it takes the inside to be warmed through. This should only take about 1 minute per side. Using chopsticks to flip these is very handy! Be careful not to overload the pan. Have a single layer only.
  6. When golden brown, remove gently and let drain on paper towel. Continue cooking until you have desired quantity. Serve hot with your favourite warmed up pizza or tomato sauce. Enjoy!
Recipe Notes

You can make these ahead of time and freeze uncooked in a single layer on parchment paper. I used this Super Simple Sauce to dip them in!
I am sure they would be great with other traditional pizza toppings added in, like some finely chopped mushrooms! Have fun experimenting!
