Instructions
  1. Rinse and drain the soaked cashews. ( I always soak twice as many cashews as I need and freeze them after rinsing. It makes soaked cashew recipes more appealing!)
  2. In a high speed blender, combine all the ingredients and blend until the mayo is smooth and creamy. Adjust thickness by adding a little water, if you want a thinner dressing. Adjust flavour by adding salt and pepper to taste, or a little agave, if desired.
  3. This will keep in the fridge for at least a week. Try adding a variety of herbs or flavours to make wonderful flavoured mayos! My favorite is adding a little mustard/dijon and a little agave to make a sweet mustard/mayo sauce. Enjoy!
Recipe Notes

Try adding a spoonful of Smoky Jalapeno Sauce and a little water to some of this creamy mayo to make a lovely drizzle to pour over Sweet Potato Tacos or your favourite taco combination!
