Ingredients
- 2 cups plant mik
- 2 Tablespoons apple cider
- 2 flax "eggs" Combine two Tablespoons of ground flaxseed with 6 Tablespoons of warm water and let sit for a few minutes.
- 1 1/2 cups oat flour Just process gluten free quick oats into a fine flour. Remember that not all oats are considered gluten-free due to processing.
- 2 Tablespoons cornstarch
- 1/4 cup brown sugar
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/4 teaspoon allspice
- 1/4 cup melted vegan butter
- 2 large bananas mushed with a potato masher to leave a few small chunks
- 1 1/2 teaspoons vanilla
Spiced Maple syrup
- 1 cup maple syrup
- 2 cinnamon sticks
- 1/4 teaspoon allspice

- 1 cup pecans lightly roasted and roughly chopped.

Instructions
- Heat waffle iron and spray with oil to prevent sticking.
- Combine plant milk with apple cider vinegar to create a buttermilk-like mixture.
- Make your flax "eggs" and set aside.
- In a large mixing bowl, combine dry ingredients.
- In a separate bowl, combine milk mixture with flax "egg", melted butter, mashed banana and vanilla.
- Add the liquids to the dry ingredients and mix just until combined. A few lumps is fine.
- Let the batter sit for 10 minutes and then put about 1/2 - 3/4 cup of batter onto the waffle iron. Cook til golden brown. Cool on a rack to keep them crispy. Don't stack them or they will get soft. Keep warm in the oven until ready to eat.
- Serve an a warm plate, with a sprinkle of toasted pecans and a drizzle of spiced syrup. Enjoy!
Spiced Syrup
- In a small pot on the stove or in the microwave, warm the syrup with the cinnamon sticks and allspice. Simmer until ready to serve and then remove cinnamon sticks and enjoy!
