Banana Bread Waffles
All the sweet flavours of a banana bread in a wonderful waffle! Made with oat flour, these are gluten free and so nutritious. Serve with toasted pecans and an easy spiced syrup!

Ingredients
Spiced Maple syrup
Topping
  • 1 cup pecanslightly roasted and roughly chopped.
Instructions
  1. Heat waffle iron and spray with oil to prevent sticking.
  2. Combine plant milk with apple cider vinegar to create a buttermilk-like mixture.
  3. Make your flax “eggs” and set aside.
  4. In a large mixing bowl, combine dry ingredients.
  5. In a separate bowl, combine milk mixture with flax “egg”, melted butter, mashed banana and vanilla.
  6. Add the liquids to the dry ingredients and mix just until combined. A few lumps is fine.
  7. Let the batter sit for 10 minutes and then put about 1/2 – 3/4 cup of batter onto the waffle iron. Cook til golden brown. Cool on a rack to keep them crispy. Don’t stack them or they will get soft. Keep warm in the oven until ready to eat.
  8. Serve an a warm plate, with a sprinkle of toasted pecans and a drizzle of spiced syrup. Enjoy!
Spiced Syrup
  1. In a small pot on the stove or in the microwave, warm the syrup with the cinnamon sticks and allspice. Simmer until ready to serve and then remove cinnamon sticks and enjoy!
