Banana Chocolate Chip Mindful Muffins
A perfect way to start the day or to snack on anytime, this muffin is full of goodness! A great way to use those ripe bananas and add nutrition, these are simple and satisfying! No dairy or eggs required!

Instructions
  1. Heat oven to 350 degrees F.
  2. Toast 1/4 cup of hemp seed for 5 min, until light brown.
  3. Lightly spray muffin tin with cooking spray.
  4. Mix 2 Tbsp flax seed with 6 Tablespoons of water. Set aside for a few minutes to moisten.
  5. In a medium bowl, stir together dry ingredients.
  6. Add hemp seeds into dry ingredients.
  7. In a larger bowl, combine wet ingredients.
  8. Add moistened flax to wet ingredients.
  9. Add dry to wet and gently mix to combine.
  10. Fold in chocolate chips and/or blueberries.
  11. Spoon evenly into greased muffin tins (3/4 full).
  12. Top each muffin with a few chocolate chips and sprinkle with coarse sugar.
  13. Bake for approximately 20 minutes, watching for golden brown colour and firmness.
  14. Let cool in for a few moments in the pan and then remove carefully to finish cooling on a cooling rack. Enjoy!

Wonderful while warm, but they do stay moist! We love them with peanut butter as a great breakfast, or an evening snack! They also toast up very well the next day! Enjoy!
