A quick combination of fresh flavours and colours makes this Blackberry Squish Quinoa salad a perfectly delicious and nutritious salad, side dish or make-ahead main course!

  1. Wash and squish your fresh blackberries through a sieve to remove seeds.
  2. In a jar, combine the vinegar, agave, garlic, and salt and pepper to taste.
  3. Add your squished blackberries and shake to combine! This makes a great salad dressing for regular salads, too!
  4. In a large bowl, toss together your cooled quinoa, the chopped peppers, and the chopped chives.
  5. Drizzle over the blackberry squish dressing and toss gently to combine. This is great served on a bed of lettuce and decorated with some fresh tomatoes!
  6. This can be eaten right away or made ahead and enjoyed the next day. It keeps well in the fridge for a few days!
