Brazil Nut Clusters
Make these a few days ahead and try not to eat them. Once you have the ingredients, the creation takes only minutes.
Roughly chop Brazil nuts and cook on a baking sheet for about 5-6 minutes until browned and toasty. Be careful not to let them burn. Remove and lightly salt. Let cool.
Chop cherries very small. Measure out your coconut.
In a microwaveable cup, melt chocolate chips by heating on high for 30 seconds, stirring and then heating and stirring again until they are just melted.
Save out a few nuts for decoration, if desired. Stir all ingredients together and spoon a little into each cup.
Let set for a few hours. These keep well in a cool place. Don't refrigerate as they will become cloudy-looking, though they will still taste good! Enjoy!
