Brazil Nut Clusters
Make these a few days ahead and try not to eat them. Once you have the ingredients, the creation takes only minutes.

  1. Heat oven to 350 degrees F.
  2. Arrange some small “candy cups” on a plate.
  3. Roughly chop Brazil nuts and cook on a baking sheet for about 5-6 minutes until browned and toasty. Be careful not to let them burn. Remove and lightly salt. Let cool.
  4. Chop cherries very small. Measure out your coconut.
  5. In a microwaveable cup, melt chocolate chips by heating on high for 30 seconds, stirring and then heating and stirring again until they are just melted.
  6. Save out a few nuts for decoration, if desired. Stir all ingredients together and spoon a little into each cup.
  7. Let set for a few hours. These keep well in a cool place. Don’t refrigerate as they will become cloudy-looking, though they will still taste good! Enjoy!
