Caramel Apples Muffins

Instructions
  1. Heat the oven to 350 degrees F. Prepare your muffin tins by greasing well and flouring.
  2. Mix your 2 Tablespoons of flax seed with the 6 Tablespoons of warm water and let sit until mixture has "gelled"
  3. In a large mixing bowl, beat the butter and the two sugars until light.
  4. Add the flax eggs, milk, and the vanilla and mix well.
  5. In a separate bowl, sift flour together with spices, and rest of dry ingredients.
  6. Wash and core two large apples and shred them with their skins on, using a food processor or a hand grater.
  7. Add your dry ingredients to your mixing bowl and mix gently and briefly just until combined.
  8. Fold in the grated apple.
  9. Spoon the batter into prepared muffin tins.
  10. Bake about 15-20 minutes or until firm to the touch and a skewer inserted into the middle comes out clean. While muffins are cooking, make your caramel icing.
  11. Let muffins cool for a few moments in the pan and then gently remove muffins and let cool on a rack. Ice when muffins have cooled a little.
Caramel Icing
  1. In a saucepan, combine butter, brown sugar, milk and corn syrup. Bring this to a boil and then let cook for about 5 minutes on medium heat.
  2. Beat in the icing sugar and vanilla until smooth. If you want a thinner glaze, add less icing sugar.
  3. Spoon this over each muffin. A thicker icing will make a sweeter but delicious caramel fudge icing.Enjoy!!
Recipe Notes

These are wonderful eaten warm, but would make a great lunchbox treat! I added 1/3 cup of oatmeal to a batch and it worked well, too!
