Ingredients
- 4-6 medium-sized carrots
Marinade
- 1/4 cup soy sauce
- 1/4 cup veggie broth
- 2 Tablespoons apple cider vinegar
- 2 Tablespoons maple syrup
- 2 cloves finely minced garlic
- 1 teaspoon mustard
- 3/4 teaspoon onion powder
- 1/2 teaspoon liquid smoke

Instructions
- Heat a large pot of salted water to boiling. Wash and cut carrots to the length of the buns that you are using. Try to create a carrot with an even diameter from end to end, so that it has the shape of a hot dog and will have an evenly cooked texture. Boil until carrots are fork-tender.
- Combine all marinade ingredients in a bowl and whisk to combine.
- Let the cooked carrots sit in marinade for about 4-6 hours.
- When ready to eat, cook your "dogs" on a grill or on a frying pan to give them a little char for extra flavour. Enjoy one of these on a fresh bun with your favourite toppings!
