Carrot Dogs
Treat this marinated carrot recipe as you would any hot dog, serving it up in a fresh bun and adding all your favourite toppings. We like the basics, mustard and tomatoes (or ketchup), but some purple coleslaw or fried onions would also be great!

  1. Heat a large pot of salted water to boiling. Wash and cut carrots to the length of the buns that you are using. Try to create a carrot with an even diameter from end to end, so that it has the shape of a hot dog and will have an evenly cooked texture. Boil until carrots are fork-tender.
  2. Combine all marinade ingredients in a bowl and whisk to combine.
  3. Let the cooked carrots sit in marinade for about 4-6 hours.
  4. When ready to eat, cook your “dogs” on a grill or on a frying pan to give them a little char for extra flavour. Enjoy one of these on a fresh bun with your favourite toppings!
