  1. In a pot or a microwaveable bowl, combine the flour and water and bring to a boil to make a thick paste-like mixture. Set aside to cool to room temperature.

  1. Combine the flour, sugar, salt and yeast in a mixing bowl with a dough hook.
  2. Combine the flax "eggs" with the milk and tangzhong. Add this to the dry ingredients and knead until you have a dough.
  3. Now add the softened vegan butter and continue kneading for a few minutes until you have a soft, smooth, elastic dough. Add a little more flour, if required, but don't add until you have kneaded in the butter completely.
  4. Lightly grease the bowl, and turn the bread so that it is also lightly greased. Cover and let rise until doubled in size, about 40-50 minutes.
  5. After it has doubled, divide the dough in half. With each half, make four equal balls. With each ball, roll out the ball into a rectangle about six inches long and 4 inches wide. With the short side horizontal, fold the top up to the middle and then the bottom up to the middle. Flip this upside-down and roll this until it is a rectangle again.
  6. Roll up each rectangle tightly, pinching to seal the seams. Place four pieces in a welll-greased bread pan, with the seam down. Repeat for the second loaf.
  7. Cover loaves with a lightly greased piece of cling wrap. This should be loosely on top. Allow the loaves to rise until almost double in size.
  8. While the loaves are rising, heat oven to 325 degrees F.
  9. Just before baking, brush the bread with a little plant milk.
  10. Bake the bread at 325 degrees F. for about 20-30 minutes. Make sure the bread is a rich golden brown. Let sit in pan for a few moments and then turn out on a rack to cool. Enjoy!
Recipe Notes

This is hard to resist as it comes fresh out of the oven but it is actually better once it has cooled. It is also great toasted the next day and stays fresh longer than a regular loaf!
