A wonderful flavour combination of fresh orange and chewy cranberries, this sweet monkey bread is a tasty treat any time!

Ingredients
- 2 cups unbleached flour
- 1/4 cup potato flour This adds a moist and chewy texture, but you could sub with ap or bread flour.
- 2 Tablespoons sugar
- 3/4 teaspoon salt
- 2 teaspoons instant /fast-rising yeast
- 3/4 cup oat milk, or other unsweetened, unflavoured plant milk
- 2 Tablespoons soft vegan butter
- 2 flax "eggs" Combine 2 Tablespoons of ground flaxseed with 6 Tablespoons of warm water and let sit for a few moments.
- 1 teaspoon finely grated orange rind
- 1/2 cup dried cranberries chopped finely

- 4 Tablespoons sugar
- zest of one orange Rub this into the sugar for maximum flavour.
Glaze
- 4 Tablespoons fresh orange juice
- 1/4 cup sugar
- 2 Tablespoons vegan butter

Instructions
- Make the flax eggs and set aside.
- Warm the milk and butter in the microwave for a few seconds. It should feel quite warm, but not hot.
- In a large mixing bowl with a kneading attachment, add the warm milk and butter, and the flax eggs. Mix to combine.
- In another bowl, stir together the dry ingredients. Add this mixture to liquids in the mixing bowl and knead until a smooth, soft dough forms. Add a little more flour as you are going to help the dough form a ball and pull away from the sides of the bowl. This will take about 10 minutes. Add the grated orange rind and the chopped cranberries and knead until evenly distributed.
- (At this point, you could choose to put this dough, in a greased bowl, covered, into the fridge overnight and shape and bake it the next day. Bring to room temperature the next day before shaping.)
- Let the warm dough sit for about 10 minutes and then divide the dough into 32 pieces. Generously grease a small bundt pan or angel cake pan.Roll each ball of dough into the topping mix to coat. Arrange the balls evenly around the pan.
- Cover the pan and allow dough to rise in a warm place to almost double. This will take about an hour. While dough is rising, make the glaze by combining the ingredients and heating on the stove or in a microwave until sugar is dissolved and the butter is melted.
- When dough is nearly risen enough, heat the oven to 325 degrees F.
- Just before baking, drizzle the glaze evenly over the dough. Bake this for about 35-40 minutes or until a rich golden brown.
- Remove from oven and let sit for just a moment to set. Then, while still warm, turn pan upside down on a serving plate and release the monkey bread. Excellent to eat while warm! Enjoy!
