- 1 cup unbleached flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1/2 cup brown sugar
- 1/4 cup vegan butter
- 3/4 cup crunchy natural peanut butter
- 2 Tablespoons plant milk
- 1 1/2 teaspoons vanilla
- 2 Tablespoons maple syrup
- finely grated rind and juice of one orange
- 1 cup dried cranberries or "craisins"
- 1 cup rice crispy ceraal
- 3/4 cup oatmeal

Instructions
- Heat oven to 350 degrees F.and line your pans with parchment paper.
- In a bowl, sift together the flour, salt, and baking soda.
- In a large mixing bowl, cream together the butter , the peanut butter, the sugar and the maple syrup until fluffy.
- Add your milk, vanilla, orange juice and rind to the butter mixture and blend.
- Now add your sifted dry ingredients and mix to combine.
- Add the oatmeal and craisins with a quick stir.
- Fold in the rice krispy cereal.
- At this point, you can chill the dough for a few minutes or go ahead and shape them. Roll the dough in 1 inch balls and place on parchment, leaving room to spread a little. With the bottom of a glass, flatten each cookie a little to create an even look.
- Optional but tasty and attractive: Before baking, make the orange sprinkle by crushing some orange rind into coarse sugar with your fingers to create an orange-coloured sprinkle! So simple but wonderful! Sprinkle on your cookies and then bake for about 10 minutes.
- Remove from cookie sheet and let cool. Enjoy!
