Use store-bought puff pastry (“accidentally” vegan!) to make these incredibly easy but impressive treats in just a few quick steps. Combine fresh or frozen apples with some fresh or frozen blueberries, add a little sugar and spice, and you have a delicious filling.
Thaw pastry according to package. Keeping the dough cold is important.
Heat oven to 350 degrees F. Line 2 cookie sheets with parchment paper.
Make your filling so it will be cool for strudel creation. Combine the sugar and cornstarch. Stir it into a pot with the fruit and remaining filling ingredients. Stir and cook for a few moments until the mixture comes to a boil and thickens. Let cool.
If you are using the pre-rolled puff pastry sheets, this is so very easy. Just unroll and cut each 10 x 10 sheet into 9 rectangles. On each of nine rectangles, put a heaping tablespoon of filling, leaving a clean edge all the way around. Dampen the edges with a little water to help make a seal.
With your other nine rectangles, make some air vents in the pastry by slicing through the pastry in a few places. This is important to allow the pastry to cook well.
Place the tops over your fruit-filled tops and press the edges together with a fork to seal.
Place on the cookie sheets and brush each with some aquafaba. Sprinkle with coarse sugar.
Bake for 15-20 minutes or until the pastry is a deep golden brown. Once done, let cool on a cooling rack to stay crisp. Enjoy!
