These little pancakes are an easy, wholesome combination of applesauce and oat flour! Serve them with some softened apple bits for a lovely treat anytime! Our little also loves some scrambled Just Egg, homemade or store-bought.

Easy Applesauce Oat Cakes
These mini bites of applesauce and oat goodness are gluten-free, refined sugar free and loved by littles!
In a large bowl, mix applesauce, milk and vinegar. Let sit for a few minutes.
Add vanilla and maple syrup to large bowl.
In a separate bowl, stir together the oat flour, baking powder, cinnamon and salt.
Add the dry ingredients to the wet and stir just until combined.
Let batter rest for a few minutes.
Drizzle a little oil in a pan, or use a non-stick pan if you want.
Using about a tablespoon of batter to make mini cakes! Let cook on medium heat until bubbles show through the batter and it looks dry around the edges. Flip and cook until cakes are brown and cooked through.
Serve with a little maple syrup or fancy them up with some softened apple bits that have been cooked with a little cinnamon.
Leftovers, if there are any, freeze well and can be toasted up for later!
