Erin’s Extra Green Guac
Start with a ripe avocado and you can’t go wrong! Fresh spinach, lime juice, onion, and, of course, lots of garlic add delicious flavours, while the chopped pistachios add a richness and a great crunch!

  1. Mash your ripe avocados in a large bowl. Add the lime juice and stir.
  2. Chop your onion finely and add it to your bowl. Add the minced garlic. Increase the quantity if you are a garlic lover like Erin!
  3. Chop your spinach and pistachios and add them to the bowl. Season to taste with salt and pepper. Enjoy!

This could be a side dish or even a full meal! It is great with Spicy Smashed Potatoes as a dip and, of course, would be wonderful with nachos!
