Ingredients
- 2 Tablespoons vegan butter
- 1 medium onion sliced thinly
- 2 cloves fresh garlic minced
- 1/2 teaspoon fresh rosemary
- 1/2 teaspoon fresh thyme
- 1 large sweet potato
- 2 medium white potatoes
- 1/4 cup vegan butter, melted
- salt and pepper to taste

Instructions
- If cooking now, heat oven to 350 degrees F.
- Grease a loaf pan or a small cake pan.
- In a small pan, melt the butter over medium heat. Add the sliced onions, the minced garlic and the herbs. Cook until onion is translucent. Do not brown.
- Peel and slice the sweet potato into very thin slices. Wash but do not peel the white potatoes and slice them into equally thin slices.
- Layer the potatoes and the onions in your pan. Sprinkle with a little salt and pepper on each layer.
- Drizzle the 1/4 cup of melted butter over the top of the final layer. Cover the pan with tin foil and let cook until tender. Enjoy!
