In a small pan, melt the butter over medium heat. Add the sliced onions, the minced garlic and the herbs. Cook until onion is translucent. Do not brown.
Peel and slice the sweet potato into very thin slices. Wash but do not peel the white potatoes and slice them into equally thin slices.
Layer the potatoes and the onions in your pan. Sprinkle with a little salt and pepper on each layer.
Drizzle the 1/4 cup of melted butter over the top of the final layer. Cover the pan with tin foil and let cook until tender. Enjoy!
