Instructions
  1. In a small cup, combine two Tablespoons of ground flax seed with 6 Tablespoons of warm water and let sit for a few minutes.
  2. In a large mixing bowl combine the instant yeast, 4 cups of the flour, sugar, and salt.
  3. Combine the warm milk, the warm mashed potatoes, the roasted garlic, and the flax "eggs".
  4. Add the liquid mixture to the dry ingredients and mix until combined.
  5. Add the finely chopped green onion. (Add more if you love onion!)
  6. Knead for 5-6 minutes, adding flour as necessary to make a soft but smooth dough. It should pull away from the sides of the bowl.
  7. Grease the bowl with some oil and turn the dough around to coat all sides. Cover and let sit in a warm place until the dough has doubled in size. This will be about an hour.
  8. Line a 9 x 13 inch pan with parchment paper or grease it well.
  9. Divide the dough into approximately 20 pieces. Roll each piece into a ball and place with the seam side down into the pan.
  10. Cover and let rise until approximately doubled in size. This will take approximately an hour. 15 minutes before buns are ready, heat oven to 350 degrees F.
  11. Bake the buns for about 20-25 minutes until buns are golden brown.
  12. Remove buns from oven and brush with a mixture of agave and melted butter.
  13. Let buns cool a little and then eat or let cool on a rack so that the bottoms don't get soggy. Enjoy the deliciousness!
