A traditional way to use mashed potatoes, this update uses whole baby potatoes, some fresh green onion, and takes only a few minutes! Crispy and brown on the outside, the insides are hearty and satisfying!

Instructions
  1. In a large pot of salted water, boil baby potatoes until soft. You should be able to easily put a fork through the potatoes.
  2. Mash potatoes, with their nutritious skins.
  3. Add flour enough to make a soft dough. Add chopped green onions and salt and pepper to taste.
  4. Shape your potato dough into thin pancakes and fry on an oiled pan until crispy and brown.
  5. Serve as a side dish, or add a salad and make it a meal. Enjoy!
