A perfect bite of citrus is a lovely fresh taste on a holiday tray! This recipe can be made and decorated as traditional flat cookies or rolled in coconut and made into Citrus Snowballs!

Ingredients
- 3/4 cup vegan butter
- 3/4 cup organic sugar
- 1 flax egg Combine one Tablespoon of ground flaxseed with 3 Tablespoons of warm water and let sit for a few minutes.
- 2 Tablespoons fresh lemon juice
- juice of one lime
- grated rind from one lemon and one lime
- 1 teaspoon vanilla
- 2 Tablespoons oat or any plant milk
- 1 Tablespoon cornstarch
- 1 1/2 cups flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup almond flour
Cream Cheese Frosting
- 1/4 cup vegan butter
- 1/4 cup vegan cream cheeze I used Tofutti brand.
- 2 cups icing sugar
- 1/2 teaspoon vanilla
- 1 teaspoon fresh lemon juice
- 1/2 teaspoon fresh lime juice
- lime rind and slivered dried cranberries to decorate
- sweetened shredded coconut for Citrus Snowballs

Instructions
Cream Cheeze Icing
- In a mixing bowl, cream the butter and cream cheeze together. Add the sifted icing sugar along with the lemon and lime juices and the vanilla. Beat until smooth, adding a little more lemon juice to make a glaze-type icing that is not too thick or too thin.
- When cookies are cool, while they are on the rack, use this glaze to cover the cookies. The Citrus Snowballs should be covered with the glaze and then rolled in coconut. If you want to add decorations, try a little grated lime peel and a sliver of dried cranberry; be sure you add these while the icing is still soft.
- Leave the iced cookies to dry before eating. These can be made ahead and kept airtight. Enjoy!
