Instructions
  1. Wash, cut and steam your carrots until soft.
  2. Put cooked carrots in a food processor and add a little water to process til almost smooth.
  3. Add the cornstarch, the potato flour, the onion powder and then the remaining flour gradually until the consistency is like a sticky playdough.
  4. Remove mixture from the processor and add flour until the dough is workable but not too dry.
  5. Roll small balls of dough, about 1/2 inch diameter, and place on piece of floured parchment paper. Push a little finger into the middle of each. You can get some toddler assistance with this! They can be frozen now as they are, or used right away. If freezing, make sure they stay separate on a tray until frozen before bagging.
  6. When ready to eat, bring a pot of water to a boil. Put the buttons gently into the water and let boil until they float. Remove from water; no rinsing required.
  7. Serve with a favourite sauce. They were popular with a Roasted Garlic Cashew Cream! Enjoy!

These bright little button bites were served with a little Roasted Garlic Cashew Cream, some hummus, some rice crackers, some blueberries cut in half and some slices of banana.
