Magic Melting Shortbread

These melt-in-your mouth cookies are a family favorite and always part of any wintery celebration table! They are simple to make, freeze excellently, and taste great frozen!

You can use a cookie press to make these, or you can just dab them on to cookie sheets with a spoon. Both ways are delicious!

Instructions
  1. Heat you oven to 350 degrees F.
  2. Line your cookie sheets with parchment paper.
  3. Sift together your flour and cornstarch.
  4. Beat your softened vegan butter in a large mixing bowl until it is very fluffy and light.
  5. Add sifted icing sugar and mix well.
  6. Add your flour mixture and beat again until the mixture "breaks". It will take a few minutes of beating.
  7. Add in your flavours and adjust for preference. My mom adds a little more almond at this point, but you don't want to make it overpowering.
  8. You can but this on your cookie sheets now, with 1 teaspoon mounds, or you can use a cookie press. Sprinkle with a little coloured sugar, if desired, or put a bit of candied /maraschino cherry on each to decorate.
  9. Bake for approximately 12 minutes, until the cookies are a light golden brown. Watch closely near the end!
  10. Let cool, as this is one cookie that tastes better cold. Enjoy!

I was excited to discover how well this recipe works in a cookie press, as I love to make them heart-shaped! I also tried tried dipping half the heart in melted chocolate and it was wonderfully easy and delicious!
