Naturally yet strangely purple, these moist scones are made with a deep purple sweet potato that is so very rich in colour! Make these tasty treats for anyone who enjoys a lovely scone and the colour purple!

Purple Sweet Potato Scones
A deep purple experience in the shape of a moist and delicious scone! The sweet potato makes them unique and wonderful!
Heat the oven to 400 degrees F. Prepare a pan by lining it with parchment paper.
In your food processor, or in a mixing bowl, combine the mashed potato, the milk and the vinegar. This will make a smooth purple mixture. Put this mixture in a bowl. Clean out the processor before continuing. ( If you don't have a food processor, make sure this mixture is whipped smoothly in a mixing bowl.)
In a clean processor, combine the flour, sugar, baking powder, and salt by pulsing a few times.
Add the cold butter and pulse a few more times until the butter has been evenly distributed and the mixture looks crumbly.(Or cut the butter into the flour mixture until it is evenly distributed.)
Add the milk mixture and pulse a few more times to create a dough. Do not over mix. (If doing this by hand, stir the dry ingredients together with the wet just until the dough comes together.)
Turn the mixture out onto a lightly floured surface and gently form into a ball. The less handling, the more tender the scones will be.
Divide the ball in half and make two thick circles of dough about an inch thick.
Cut each circle into four triangular scones. Place these on your prepared sheet, leaving some room between each scone. Brush each with a little milk and sprinkle with a little coarse sugar, if desired. It adds a little crunch and sparkle!
Bake for approximately 10-15 minutes. Check the bottoms, to make sure they don't burn. The colour makes it difficult to tell if they are done!
Remove from pan immediately and allow to cool a little. Serve with your choice of toppings; we loved marmalade on these! Enjoy!.
