This wonderfully quick dessert looks fancy and tastes wonderful! Serve warm with a little vegan ice cream or coconut whipped cream!

Ingredients
- 2-3 medium apples
- 1 large package puff pastry, unthawed Tenderflake is vegan friendly!
- 1/3 cup fruit preserves I used blackberry with most seeds strained out.
- 1/2 cup icing sugar thinned with water for a glaze, if using.

Instructions
- Heat oven to 400 degrees F.
- Brush a pie pan/quiche pan with a little melted vegan butter.
- Lay your pastry on your pie pan and trim to fit. I used a fork to push the pastry against my quiche pan edges.
- Lay your thinly sliced apples in a single layer over the pastry. I used unpeeled for added nutrition, but you could peel them, of course!
- Brush your apples with some fruit preserves. Blackberry preserves add wonderful colour and flavour! (seeds removed)
- Bake for 20 minutes, watching that the pastry doesn't burn.
- Drizzle with a little icing sugar glaze, if desired.
- Serve warm with vegan ice cream for a special treat! Enjoy!
Recipe Notes
For an extra crunch and a little more fanciness, you could sprinkle on some sliced, toasted almonds! A quick sifting of icing sugar over the top would look wonderful. too!
