Quinoa Falafel Bites with Tzatziki
This combination of quinoa, chickpeas, and lots of satisfying spice, makes a nutritious and delicious appetizer for your holiday gatherings. Gluten-free and protein rich, these are a tasty addition!

  1. Put your cooked quinoa in a large bowl.
  2. Combine the flax seed and water and let rest for a few moments.
  3. In a frying pan, warm the oil and cook the onion and garlic for a few moments until translucent. Put this in a food processor. Add the flax “eggs” to the food processor as well.
  4. In the food processor, combine the rinsed chickpeas (saving the water from the can for another wonderful recipe like Aquafabulous Pavlova http://www.avitalyopp.com/recipe/aquafabulous-pavlova-dessert-with-luscious-lemon-cream/) with the remaining ingredients.
  5. Pulse the ingredients in the food processor until it is well combined and feels ready to make into balls.
  6. Form small balls, just bite-sized. (about 1 inch in diameter) Roll each ball in the mixture of bread crumbs, parsley and salt and pepper. Place on a sheet of parchment paper until ready to cook. You can refrigerate for a day or freeze them.
  7. When ready to eat, the thawed falafels can be baked in a 350 degree F. oven until brown and crispy. I just bought an inexpensive air fryer and it was amazing how easy it was to get crispy falafels in just a few moments! I am a convert!!
  8. Serve warm as an appetizer with some toothpicks and a tasty Tzatziki Dip. Enjoy!
Recipe Notes

Make a big batch, roll them and freeze so they will be ready when the crowds gather! Leftovers are also easy to eat in a wrap. Just chop up some tomatoes, peppers and cucumbers, spread a wrap with some tzatziki and add four or five Falafel Bites! Add the veggies, roll it up and bite into great flavour!
