The kids could have fun helping make this with you. Make a creamy, spicy drizzle with Smoky Jalapeno Sauce stirred into a Homemade Mayo or spoon on some of your favourite salsa.

Roasted Sweet Potato Tacos
Lots of roasty, spiced veggies drizzled with a Smoky Jalapeno Mayo are wrapped in your favourite shells. This is so quick and easy to create. Some fresh, sweet peppers add a great crunch and the sliced avocado is a creamy treat.

Ingredients
6taco shellsIf you need a gluten free version, check your local store or try making your own.
4cups sweet potato chunksTwo medium-large sweet potatoes cut into small cubes.
Heat the oven to 375 degrees F. Drizzle some oil on a large baking pan.
Cut the sweet potato into small cubes. Put these in a bowl along with the corn, black beans, and slices of onion. Drizzle the 2 Tablespoons of oil over all the veggies and toss to coat. Then sprinkle the taco seasoning over all the veggies and toss to cover evenly.
Spread the veggies out on the pan, as separately as possible. Bake in the oven for approximately 20-30 minutes, stirring every few minutes to create some charred and crispy bits. When the sweet potato is tender and crisped on the outside, you are ready to eat!
While the veggies are cooking, chop up some crisp sweet peppers or and/or some cucumber or tomatoes. Slice some avocado and sprinkle with salt to keep it green.
Warm the taco shells, as desired. These are soft tacos, but the filling could be used in crisp shells as well, or even on a bed of greens.
Make some creamy drizzle by mixing some Smoky Jalapeno Sauce with some Homemade Mayo, or make your own drizzle with any vegan mayo or sour cream mixed with something spicy, like a hot sauce. Enjoy experimenting!
You could construct the tacos in the kitchen, or just put out a bowl of the roasted veggies to share and a sharing bowl of crunchy fresh veggies. Some plain vegan sour cream would be great on these, too! Let each person top and drizzle as they desire! Enjoy!

Stir a little of your favourite hot sauce into a cashew-based Homemade Mayo for a rich and creamy sauce! This would also be great with roasted cauliflower chunks. The roasted veggie filling is great in a bowl,too!
