Sesame Scallion Pancakes
These thin, crepe-like pancakes are so easy and flavourful with a sourdough tang. Sesame seeds are a surprisingly great source of protein, calcium and iron! Drizzle on a favourite sauce, such as hoisin, and enjoy!

  1. Heat a large frying pan or crepe pan and spray on a little oil.
  2. Combine the flour, sourdough starter, salt, and baking powder in a mixing bowl. Add the plant milk and mix until you have a smooth, heavy cream-like batter.
  3. Heat a pan to medium high with a little oil. If you have a non-stick pan, it works well.
  4. Pour a 1/3 cup of batter onto the heated pan and swirl the batter around the pan until it is very thin, like a crepe.
  5. Allow the pancake to cook until it seems to have dried around the edges. Sprinkle generously with sesame seeds and chopped green onion. Press thes topping gently into the batter. Once the pancake is brown on the bottom, (Check by gently lifting an edge.) flip it over and cook until the onion has browned a little and the pancake seems cooked. It will not be brown all over, as the toppings keep the pancake from direct contact with the pan.
  6. Serve warm with a drizzle of hoisin sauce, or your favourite Asian sauce. You can eat these with a knife and fork, or just tear off chunks and dip! Enjoy!
