Instructions
  1. Heat oven to 350 degrees F.
  2. To prepare: Toast 1 cup of whole pecans until brown and full-flavoured; it only takes a few minutes. Leave 12 pecans aside for muffins, chop the remainder.
  3. Toast hemp seed for 5 min, until light brown. Let cool.
  4. Lightly spray muffin tin with cooking spray.
  5. In a small bowl, mix 1 tsp cinnamon with 1/4 cup coarse sugar. Put aside.
  6. Mix 2 Tbsp flax seed with 6 Tablespoons of water and set aside to moisten for a few minutes.
  7. In a medium bowl, stir together dry ingredients.
  8. Add hemp seeds into dry ingredients.
  9. In a larger bowl, combine wet ingredients.
  10. Add moistened flax to wet ingredients.
  11. Add dry to wet and gently mix to combine. Do not overmix.
  12. Gently fold in the roasted, chopped pecans.
  13. Spoon evenly into greased muffin tins (3/4 full).
  14. Top each muffin with a toasted pecan and sprinkle with cinnamon sugar.
  15. Bake for approximately 20 minutes, watching for golden brown colour and firmness.
  16. Let cool in for a few moments in the pan and then remove carefully to finish cooling on a cooling rack.Enjoy!
Recipe Notes

Wonderful while warm, but they do stay moist! We love them with peanut butter as a great breakfast, or an evening snack! They also toast up very well! Enjoy!
