Sunshine Bread
A spectacular and surprisingly simple to make centerpiece, this flavourful bread melts in your mouth and goes well with a pasta dish or just a big salad.

Ingredients
  • 1cup almond or any plant milk
  • 1teaspoon sugar
  • 3teaspoons yeast-if your sub the quick rising yeast you can speed up the process.
  • 1/2teaspoon salt
  • 4Tablespoons oil
  • 3cups flourI used a combination of multigrain bread flour and all purpose flour.

  1. Warm your milk so it is warm to the touch but not too hot to kill the yeast.
  2. Add the sugar and stir.
  3. Sprinkle on the yeast and let it sit for a few minutes until the yeast bubbles.
  4. Add the oil.
  5. Add your flour, starting with just 2 cups, and the salt. Using your kneading hook, add flour until dough is smooth, soft and elastic. This will take a few minutes.
  6. Oil the bowl and make sure the dough is also lightly greased all over. Cover with a cloth and let rise in a warm place until double. This usually takes about an hour.
  7. While dough is rising, make this simple but delicious filling. Simple mix all ingredients together.
  8. When dough is doubled, punch down and divide in two equal pieces. Make two ten inch circles. Put one round onto a baking sheet covered in parchment paper.
  9. Spread the filling evenly over the bottom bread circle, leaving a 1/2 inch circle around the outside edge uncovered. Using a brush, wet the edge with a little water. This will help the top layer adhere to the bottom.
  10. Lay the top circle of dough on top and adjust so that it matches. Put a drinking glass upside down in the center. Using a sharp knife, cut the dough into 24 even slices, leaving the circle of uncut dough in the center. Have a look at the picture! I start by cutting it into 4 equal pieces and then each quarter into six.
  11. Now twist each slice three times around until you have a beautiful sunflower! Adjust the slices so that they are sitting evenly.Remove the glass and brush the bread all over with the melted oil. Sprinkle the sunflower seeds on the center circle. Let rise for about 30 minutes in a warm place. Heat the oven to 390 degrees F.
  12. When the breaded has risen, place in a hot oven for about 20 minutes, or until golden brown. This is best served warm but it reheats well. Enjoy!
