Super Seed Buns
So much goodness, a lovely chewiness, and they can be started the day before! This recipe makes 12 burger buns or two dozen small ones. Make what you need now and make them fresh again tomorrow with the dough from the fridge.

  1. In a large mixing bowl, combine flour with yeast, sugar and salt.
  2. Mix your sunflower, sesame and poppy seeds together. Set aside 2 Tablespoons for sprinkling on top of the buns.
  3. Add the remaining seeds to the flour mixture. Stir together.
  4. In a large microwaveable bowl, heat milk and oil. Make sure it is warm enough to start the yeast but not boiling. (see instructions on yeast.) The advantage of using the instant yeast is that you can skip the first rising and save an hour!
  5. Stir the flax egg into the warm milk.
  6. Add liquids to flour mixture and stir together. Using a kneading tool on the mixer is ideal, but you can do this by hand. Knead until the dough is soft and smooth and comes away from the sides of the bowl.
  7. Oil the ball of dough and let rest for 10 minutes covered.
  8. At this point, you can refrigerate the dough or you can start making the buns.
  9. Prepare a cookie sheet with parchment paper. Heat oven to 350 degrees F.
  10. Pull off the amount of dough you want to make into a bun. I used about 1/2 cup-sized balls. To make hamburger buns, I round the dough in my hands to make it smooth on top, pulling it into a pucker on the bottom. Place each on the sheet and flatten down to about one inch in height and 3-4 inches in diameter. They will rise.
  11. Brush each bun with a little aquafaba or plant milk and then sprinkle on the mixed seeds, or a combination of white and black poppy seeds.
  12. Let buns rise for 30 minutes in a warm place.
  13. Bake buns until golden brown, 15-20 minutes depending on size.
  14. Eat while warm with fresh jam or use for burgers! Enjoy!
