Sweet Blue Poppy Seed Buns
Sweet Blue Poppy Seed Buns are a lovely treat for the taste buds and the eyes! An unusual bread-making method makes a wonderfully-textured, slightly sweet dough, while the Butterfly Pea Flower Powder and the poppy seeds add a special magic!

  1. In a pot or a microwaveable bowl, combine the flour and water and bring to a boil to make a thick paste-like mixture. Set aside to cool to room temperature.

  1. Combine the flour, sugar, salt and yeast in a mixing bowl with a dough hook.
  2. Combine the “eggs” with the milk, the dissolved pea flower powder and tangzhong. Add this to the dry ingredients and knead until you have a soft dough.
  3. Now add the softened vegan butter and continue kneading for a few minutes until you have a soft, smooth, elastic dough. Add a little more flour, if required, but don’t add until you have kneaded in the butter completely.
  4. Lightly grease the bowl, and turn the dough so that it is also lightly greased. Cover and let rise until doubled in size, about 40-50 minutes.
  5. Divide the dough into 24 equal parts and roll each dough in your hands to make a smooth ball.
  6. Place in two greased 9 x 9 pans, 12 in each pan.
  7. Cover buns with a lightly greased piece of cling wrap. This should be loosely on top. Allow the buns to rise until almost double in size.
  8. While the buns are rising, heat oven to 325 degrees F.
  9. Brush the buns with a little plant milk and sprinkle generously with poppy seeds.
  10. Bake until golden brown on the top and on the bottom.
  11. Remove from oven and let cool a few moments before removing them from the pan. This keeps the bottoms from getting too soft.
  12. Enjoy with some vegan butter, peanut butter, or soft vegan cream cheese!
